I have one at home. I'll find it and post it here for you this weekend. I have a ton of other great ones to post too....like my chocolate covered cherry and strawberry cheese cakes and shrimp scampi with angel hair pasta and so on.

1 - 4 lb. bag of Idaho Potatos, pealed and cut into bite size chunks
4 - Cups chopped Celery
2 - cups chpped onions
1 - cup finely chopped carrots
1 - can evaporated milk
1 - stick butter

Put 1/2 of the potatos in a dutch oven, then add the celery, onions, carrots and seasoning (salt & pepper). Put the rest of the potatos on top. Fill the pan with water just up to, but not over the last potatos. It is best if you can't see the water.
Cook for 1/2 and hour or until the potatos are soft. Remove from heat, pour in evaporated milk and butter. Cover for 15 minutes. If it seems to be to soupy, mash some of the potatos right in the pan.

Enjoy...
